The Irish Coffee was first created in the winter of 1943 by Joe Sheridan, a barman and chef, and was given as a welcoming drink to tourists arriving in Ireland from transatlantic flights. The Glendalough Whiskey Distillery was set up by a group of friends from Wicklow with a passion for reviving the heritage of craft distilling in Ireland.
